A GREAT CAKE FOR THE HOLIDAY!
I don’t know about you but growing up I remember when all things baked were from scratch, nice layer and sheet cakes, all cupcakes etc. Boxed cake mixes? I bet that will never catch on, well it did and while it is nice for a quick cake, nothing can compare to a cake made from scratch. I think the boxed cake mixes are made so that more air is whipped into them to make them light.
Now with a cake from scratch as this one as the example is very satisfying not overly dense and you cannot call it heavy at all, but it is not so light that you need to keep it from floating away.
I like Oatmeal Cake because it actually has something good and nutritious for you in it, Old Fashioned Rolled Oats! I can tell you this cake is one of those that is better the longer it sets, the more moist it becomes. You will be surprised to see that it has no milk in it, just the water that you put over the oatmeal to hydrate it.
The topping is to die for, butter, brown sugar, cream and coconut. This is broiled in the oven until it starts to turn brown.
If you are in a hurry and need something to stick with you, and don’t plan on eating a good meal, this cake will satisfy you for a good while.
OATMEAL CAKE WITH BROILED COCONUT ICING
Preheat oven to 350 degrees
Pan size 9×13”
Have all ingredients at room temp.
~Combine and let stand for at least 20 minutes.
1 cup Rolled Oats
1 1/2 cups Boiling Water
~Cream together.
1/2 cup Butter
1 cup Sugar
1 cup Packed Brown Sugar
~Add mixing thoroughly
2 Eggs
1 teaspoon Vanilla
~Add the Oat Mixture
~Sift together:
1 1/3 cups Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
Stir the flour mixture into the egg and oat mixture, beat about 2 minutes. Then turn into a greased cake pan and bake about 30 minutes or until done.
To ice the cake, make the following Broiled Icing and spread over the warm cake, place under the broiler until bubbly and turning brown.
BROILED COCONUT ICING
~Combine the following ingredients:
6 Tablespoons Melted Butter
1 1/3 cups Brown Sugar
1/8 teaspoon salt
3-4 Tablespoons Cream, half and half or evaporated milk
1 cup Coconut
Stir all together and spread over still warm cake and place under the broiler until bubbling and light brown, watch closely.

I am so glad you found my blog and the recipe we love so much. It is a great cake anytime of the year, and fills you up, the icing is great, a friend had to scold her husband to keep him from just eating the icing off the cake!!! LOL
