A GREAT CAKE FOR THE HOLIDAY!

PICT0826I don’t know about you but growing up I remember when all things baked were from scratch, nice layer and sheet cakes, all cupcakes etc. Boxed cake mixes? I bet that will never catch on, well it did and while it is nice for a quick cake, nothing can compare to a cake made from scratch. I think the boxed cake mixes are made so that more air is whipped into them to make them light.

Now with a cake from scratch as this one as the example is very satisfying not overly dense and you cannot call it heavy at all, but it is not so light that you need to keep it from floating away.

I like Oatmeal Cake because it actually has something good and nutritious for you in it, Old Fashioned Rolled Oats! I can tell you this cake is one of those that is better the longer it sets, the more moist it becomes. You will be surprised to see that it has no milk in it, just the water that you put over the oatmeal to hydrate it.

The topping is to die for, butter, brown sugar, cream and coconut. This is broiled in the oven until it starts to turn brown.

If you are in a hurry and need something to stick with you, and don’t plan on eating a good meal, this cake will satisfy you for a good while.
