Have you ever come home from work and wanted fresh made rolls? You are just to tired to go to the trouble of making them? Well you don’t have to, you can have fresh rolls every night if you want to. Refrigerator Rolls are made one day, and can be kept in the refrigerator for up to 10 days, in a tightly sealed container. When you want them just pinch off the amount you want shape them and let them rise.
You can also make these rolls up, refrigerate for 3 hours and shape them as desired, and freeze them before baking, Remove from the freezer 2-3 hours before baking.
1 Quart Milk
1 Cup Melted Shortening
1 Cup Sugar
1 Teaspoon Salt
2 Pkgs. Dry Yeast
1/2 Cup Warm Water
1 Teaspoon Soda
1 Teaspoon Baking Powder
9 Cups Flour
Combine milk, shortening, sugar and salt.
Bring to a boil, Let cool.
Add yeast dissolved in warm water.
Sift together soda, baking powder, and flour.
Add to milk mixture and mix well.
Cover and let rise at room temperature until doubled in bulk.
Punch down and refrigerate 3 hours to 10 days. (covered tightly).
Pinch off and shape as desired, and place in a greased pan or muffin tins.
Bake at 400 degrees for 10-15 minutes
Yield: approximately 12 dozen
