Refreshing Summer Time Staple on the Kitchen Table”
You know that the garden in coming in when the cucumbers start and a staple in our refrigerator growing up was the ever going bowl of cucumbers and onions in vinegar water. A refreshing snack to grab or placed on the table with meals!
There is nothing difficult about this recipe if you can slice a cucumber and an onion you have it.
I have tasted these done several different ways over the years, our preferred method is just as stated above. however if you prefer something sweet you can add sugar, to the mixture, feel free to use white or cider vinegar, we most always use cider vinegar in most all of our recipes.
CUCUMBERS AND ONIONS
2-4 Cucumbers Sliced – (if cucumber has nice skin on it you can leave it on, these did not )
1 Onion (you can use sweet onions, however we always use strong yellow onions) Red onion looks nice also
Cider Vinegar (to taste)
Water
Ratio for vinegar to water depends on personal preference, however 1 part vinegar to 2-3 parts water.
Salt and Pepper
Note: I have also had this with fresh chopped dill mixed in.

You know in this day and age, so many people I believe have forgotten the simple things in life. Fast foods and pre-packaged foods have become such staples in everyday life. the art of cooking and food preparation has been all but forgotten in everyday households.
We grew up with things like “Cucumbers & Onions in Vinegar Water” and a jar of Beet Pickled Eggs in the refrigerator, most of the year. It is amazing I think from talking to people, they think the only time you can have beet pickled eggs is at Easter!

Thank Cindy, we grew up with cucumbers and onions in vinegar water in the fridge all summer long, it is still a favorite. 🙂

Well they will last about a week or so in the fridge, we just always made a fresh bowl each week during cucumber season. using them as an in between meals snack or with cooked green beans etc. you would not want to make a gallon of them as they like cucumbers usually do will get slimy on you. We just cut up one or two cucumbers and make this each week. The rest were used in home canned sweet relishes or home canned pickles.

Thank you! Finally a recipe for fridge cucumbers and onions that don’t have any sugar. My mother made these and I forgot the ratio of vinegar and water. Sometimes she would add dill, a fresh tarragon sprig or some red pepper flakes too.

Thanks for the comment Glenda, sometimes depending on personal taste we will add just a bit of sugar, also depends if you are eating them plain, or with fresh green beans cooked with a ham hock etc.
When we do add sugar just a teaspoon to a large bowl you can tell it will just take the edge off the cider vinegar.
